You can disable them by renaming the files.. For example ~language_nl.php~
When you want to use them again just rename it to the original again. Works for me...

The .htaccess is just .htaccess... I'm not sure what the rewrite feature is? Where do I find that exactly? Sorry, I'm new to this script as you notice, trying to figure it all out.

I just installed this and so far it's looking great! One thing though, when I add a FAQ through the admin panel, It saves fine but it says "No URLs compatible with link verifier feature found."
