I don't understand why 1.6.6 works fine and 1.6.7 doesn't though!

1 Linux, Apache/1.3.37 (Unix) mod_auth_passthrough/1.8 mod_log_bytes/1.2 mod_bwlimited/1.4 FrontPage/5.0.2.2635.SR1.2 mod_ssl/2.8.28 OpenSSL/0.9.7a PHP-CGI/0.1b PHP 4.4.4 with Reg Globals on, and safe mode off.

2 Yes we are running cPanel

3 There was no error_log file in the relevant folder. I found the errors I listed in the error log in cPanel.

We'll see if installing 1.6.8 solves the problem.

Works like a dream!

Fresh install ran smoothly with version 1.6.8! We will attempt to upgrade all our other sites from 1.6.6 to 1.6.8 but I see no reason why that shouldn't work given our fresh install did.
